2 lbs. round steak, sliced in 1/4" slices
1 T. vegetable oil
1 clove garlic, minced
1 lg. onion, chunked
1/2 c. soy sauce
2 tsp. sugar
1/2 tsp. ginger
2 green peppers, cut into chunks
15 oz. can diced tomatoes
1/2 c. cold water
1 T. cornstarch
Brown round steak in vegetable oil in large skillet. Don't rush this step, it really contributes to the flavor. (On the other hand, if you don't have time to do it--skip it, it will still be delicious :-) )
Put round steak in crockpot with garlic and onion. Combine soy sauce, sugar and ginger. Pour over steak. Cook on low 3 hours. Add green peppers and tomatoes. Cook 2 more hours. Combine cornstarch and cold water. Put in crockpot. Cook 1/2 hour until thickened.
Serve over white rice. 6 servings.
