Chocolate Brownie Recipes...

I wanted to share two of my favorite brownie recipes. I have actually been offered money for pans of the second, the caramel brownies. Whenever I make the caramel brownies, I also make the fudge brownies because my little tweedles prefer their brownies "plain". For more wonderful chocolately recipes, check out Fried Okra.

Fudge Brownies (One Bowl-by Baker's with some modifications by me :-) )
4 squares BAKER'S Unsweetened Baking Chocolate
3/4 cup (1-1/2 sticks) butter
2 cups sugar
3 eggs
1 tsp. vanilla
1 cup flour
PREHEAT oven to 350°F. (325degrees if using a glass pan) Grease a 13x9" pan --WELL!
MICROWAVE chocolate and butter in large microwaveable bowl on HIGH 2 min. or until butter is melted. Stir until chocolate is completely melted. Stir in sugar. Blend in eggs and vanilla. Add flour; mix well. Spread into prepared pan.
BAKE 30 to 35 min. or until wooden toothpick inserted in center comes out with fudgy crumbs. (Do not overbake.) Cool in pan on wire rack. Cut into squares. Store in tightly covered container at room temperature.


Ultimate Caramel Brownies (WAY better than the turtle brownie recipe that uses cake mix)
Again, from Baker's with a few modifications from me)

4 squares BAKER'S Unsweetened Baking Chocolate
3/4 cup (1-1/2 sticks) butter
2 cups sugar
4 eggs
1 cup flour
1 bag (14 oz.) KRAFT Caramels (about 50)
1/3 cup whipping cream
12 oz. (2 cups) semi-sweet chocolate chips, optional
2 cups PLANTERS Pecan Halves, divided
PREHEAT oven to 350°F. Line 13x9-inch baking pan with non-stick foil--this is really, really important.
MICROWAVE chocolate and butter in large microwaveable bowl on HIGH 2 min. or until butter is melted. Stir until chocolate is completely melted. Stir in sugar until well blended. Add eggs; mix well. Stir in flour until well blended. Spread half of the batter into prepared pan.
BAKE 22 min. or until top is firm to the touch. Meanwhile, microwave caramels and whipping cream in medium microwaveable bowl on HIGH 2 min. or until caramels begin to melt. Stir until caramels are completely melted. Stir in 1 cup of the pecan halves.
SPREAD caramel mixture evenly over brownie; SPRINKLE chocolate chips over caramel; top with remaining brownie batter. (Some caramel mixture may peek through.) Sprinkle with remaining 1 cup pecan halves. Bake an additional 30 min. or until top is firm to the touch. Cool in pan on wire rack. Remove brownies from pan. Cut into 32 squares. Store in tightly covered container at room temperature.
