Meal Plan Monday #11

Last week was ANOTHER sick week around here. Do I sound annoyed? Good. It gets old, as I'm sure every mother reading this knows! I didn't even blog about it because I couldn't figure out a way for it not to sound like 'we're sick...again...whine, whine, whine'. Anyway, at least we're (mostly) better. Lots and lots that I had planned for last week did not happen. Not the least of which was cooking. You'll see lots of repeats! I'll be shopping on Fridays for a while, so my meal plans will reflect that change.

Sunday lunch: Cheeseburgers, corn on the cob, broccoli cole slaw, watermelon
Dinner: Take our pizza

Monday lunch (after parade) Pasta w/chicken, tomatoes, & spinach; Multi-grain french bread, broccoli.
dinner: Shrimp Scampi w/Linguini, caesar salad. Just for a lark, I'm making some mussels on the grill too. Last week when we were at Olive Garden DS tried one and loved them. I've very, very curious if it was just a fluke. Anyway, it's a good excuse to make some mussels.

Tuesday: Chicken w/Lemon-rosemary marinade, grilled squash, Near East Long Grain & Wild Rice chicken w/roasted vegetables (this is the best packaged rice EVER!)

Wednesday: One of our favorite meals--silly as that is! Salmon Patties (recipe follows), Easy peasy chicken legs (for those who won't eat salmon patties), buttered noodles, creamed peas

Thursday: Crockpot Chinese Pork Tenderloin

Friday: Make your own pizza, using refrigerated dinner roll dough. I cry uncle at trying to figure out a yummy make your own.

Salmon Cakes w/Creamed Peas
16 oz. can salmon, drained and flaked--1/4c. liquid reserved for sauce
1c. mashed potato flakes
1/4c. finely chopped onion
2T. lemon juice
1/4 tsp. pepper
2 eggs, slightly beaten
Combine above ingredients lightly. Grease 8 muffin cups. Divide mixture among muffin cups. Bake 30 minutes at 350 degrees.

2T butter/marg.
2T flour
salt, pepper
3/4c. milk
1/4c. reserved salmon liquid
1c. peas
In medium saucepan, melt margarine/butter, stir in 2T flour, salt and pepper; cook until smooth and bubbly. Gradually add milk and salmon liquid. Cook until thickened. Stir in 1c. thawed peas. Serve over salmon.

I have a fab pizza dough recipe that I'll share with you ... as soon as I get my stuff in India (probably sometime in September). It's SUPER easy, it makes two batches, it keeps in the freezer for a month, and it's delicious!!

Sounds like you're making good use of the grill this week. Those grilled mussels sound tasty.
