Time's Up!  Congrats, mami2jcnI hope you enjoy your prize pack.

I'll keep this short and sweet.  I'm cranky.  My daughter's teacher just assigned 2 hours of homework over winter break.  My 2ND GRADE DAUGHTER.  The one who has a lot going on and could really, really use a break.  Meanwhile my 4th grader has no homework.  Don't get me wrong, I'm happy about that, but it's going to make it that much harder to force Julianna to settle down and work when no one else has to.  *sigh*

School holidays should be just that - holidays. Some teachers don't seem to get that.

I realise your giveaway is probably only for US residents, but I'll tell you my favorite Mexican dish to make anyway - Nachos. We have it with sour cream, Old El Paso mild taco sauce, and lots of fresh salad. YUM! But my favourite to actually eat is enchiladas, which I don't make often because they're too messy and time consuming. I dislike serving a dinner that has taken me 100 times longer to prepare than it takes for the family to eat.

Enchiladas ... or burritos ... or soft tacos ... I'm really not picky. An Old El Paso - my favorite brand to use too!

Oh how I missed Mexican food when we lived overseas. We're finally at a stage where my girls will eat it all too!

And 2 hours of homework? Seriously? That's insane during the break!

We love quesadillas! Usually cheese for the kids, although I sneak in corn, black beans and chicken sometimes. Nathan is a salsa guy, Ruby and I love sour cream. I've also discovered the beauty of pork roast in the Crock-Pot. We shred it and use it all week long in quesadillas, burritos or nachos. Yum.
