Updated: Looking for a crazy-good, super yummy, totally different side dish? Last night I made Grilled Rice Cakes. You make sushi rice (super easy in my awesome rice cooker, an yes, sushi rice is necessary, you need it's stickiness). While it's cooking simmer 2T soy sauce and 2T mirin until reduced by half. Cube up 1/2 a stick of butter (I know, I know) and whisk it into the reduction. Divide the rice into 4 sections. Place each section in a square of plastic wrap. Wrap it up in the plastic wrap and form it into a rectangle. Heat the grill. Unwrap the rice, brush it with soy/mirin/butter mixture and grill 3-5 minutes until crispy, brush with mixture again and turn. Cook until crispy on second side and brush again. Serve. Really good. I'm not 100% sure if it's a texture thing, flavor thing or a combination but we really enjoyed it. I'm looking forward to experimenting with other flavors soon. Next week when I make the asian wings I'll probably make them again using the asian sauce instead of the soy/mirin mixture.
